Mayme began her culinary career in her home town of Minneapolis, Minnesota at the age of 17. Growing up in a single parent home Mayme took it upon herself to plan and prepare most meals as a way to help out. Through this daily routine she discovered a real passion for food. She found that cooking and learning about ingredients was a pleasure instead of a chore. Mayme considers herself fortunate in that this career chose her from an early age.
After graduating high school, she already knew what she wanted, and began her relentless, yet rewarding journey as a chef. She has worked in fine dining restaurants for the past eleven years, developing skills and techniques in both savory and pastry applications. She gained much of her early experience working for Minneapolis native chef Alex Roberts at his acclaimed Restaurant Alma. Roberts and his staff were very influential in her early years as a chef, teaching her everything from how to properly label ingredients to expediting a busy dinner service.
Following an amazing experience with her now chef mentors, Mayme was inspired to travel and continue expanding here culinary repertoire. She spent time working in Bordeaux where she began to fall in love with French pastries. After spending several months in France, Gretsch moved on to Spain to work for Michelin starred chefs throughout the country. She worked for Juan Arzak at his famous Michelin starred restaurant Arzak, as well as Ferrro in Valencia. During her time there, Gretsch really began to develop as a pastry chef, keeping detailed journals of her work and travels.
Gretsch returned to the U.S. in 2010 and took a job at Alinea, where she worked as a Chef de Partie in pastry. During her time at Alinea, Mayme was recruited to move to Nashville to help open The Catbird Seat as the Pastry Chef. After two and a half rewarding years at The Catbird Seat, she left the restaurant to pursue Utterly. Gretsch started Utterly Nashville in May of 2014 with a focus on providing fine pastries and soft serve ice cream to Nashville. Utterly is a passion project that is free from boundaries.
